I had my dinner part 1 already. Dinner part 2 by when husband is dying with hunger. I had to make something very quick. I made Easy mexican rice. Had I seen the picture, I would have doubled the tomatoes. I put in bell pepper and Thai chilli. I cooked it in a pressure cooker, half worrying if it would be overcooked. After it cooled down, I liked the rice with its puffness.

Banana pudding

I went over the roasted banana pudding recipe from yesterday and found it too consuming (shopping time, dishes, baking time), I finally decided on  caramelized banana pudding . And meringue making is merry. Flour is used in making the custard.  all purpose flour plays the corn starch  role of thickening the custard. I used  Parle G  instead of vanilla wafers.

Streit's Potato Pancake Mix

In went some Indian spices - Cumin, Dhanajiru powder, pepper and salt. Had it with green mirchi chutney and dahi. Tasted like vada. Vegeterian Kishke  can be made with carrots and celery added to the potato pancake mix.
