I used  Banana Bread Recipe  from Banana Bread Cookbook: 51 Easy But Great Banana Bread Recipes book by Eli Hartly. If you are going to bake anyways, why not try a new recipe. I am glad I did. Usually we seem to have only 3 ripe bananas. This time we had 4 just like the recipe needed. I reduced the sugar by 1/4 cup. I could have probably removed another 1/4 cup as the end result was still sweet. I liked the fine melt in the mouth texture. It reminded me of kesari.

Julias best banana bread And not just any banana bread recipe but one that can be made without the ingredient of the other recipes, that isnt in the house. for example, today I ran out of butter. So it had to be a recipe with oil. And I want to use the coconut oil lying around. The recipe said 60min for the loaf pan. I used the 9x9x2 so reduced the time to 50min. But even at that I could smell the bread 5 min before the timer would summon me.

Bananas abound, I had to make some banana bread.  Green tea banana bread  calls for 1 tbsp matcha powder which made it overpowering over the banana and sugar. For the second batch, I began with this  recipe . When it was time to put sugar, I thought why not use the 7 minute frosting which didnt set from the Beekman's coconut cake. I used about 200 ml of it. The butter. Later it was still in the microwave left for melting. Still it turned great. That was just flour, the frosting material and baking soda. For once the experiment turned fine.

Olive oil banana bread My friend used atta in the place of 'whole wheat pastry flour' &  honey instead of brown sugar( for no special reason). She sneaked in some butterscotch chips. Verdict - " It smells & tastes gr8."

This morning when we woke up, my daughter along tagged along with me to  the restroom or so I thought, but her destination is 'chocolate', may be she dreamt of it. A bit later she wiggled a chocolae out of me. the trouble began after she wanted another like she never had one. My dad suggested an apple in the place of a chocolate, and I said banana thinking of the mashable ripe one and she took it along further and said that she wants to mix, mix, mix.
