Pumpkin Pie Cake



Today orders were to buy a pumpkin pie. One slice seemed too little and  a whole pie too big. And that led me to but the 29 oz pumpkin can.  So many things that can be done with canned pumpkin other than a pie.

Pumpkin pie sheet cake is a nice way of skipping the crust but it does add a layer of cake. Any complaints? But your pumpkin pie filling remains intact. There was another similar recipe that sounded very nice. It said sprinkle the dry cake mix. I would have loved to see what happens in the case, but the instructions are not well written.

In making the Pumpkin Pie cake, with 29 oz of canned pumpkin, I used only 1 can of evaporated milk, 3/4 cup sugar, 2 eggs and a little more baking time. The filling didnt set too well with my experiment but I liked the trio layers of pie crust, topped with cake, topped with pumpkin pie filling.

While looking for pumpkins for a book on when canned pumpkin began, I came upon Pumpkin Cheesecake Cookies.

Banana pudding

I went over the roasted banana pudding recipe from yesterday and found it too consuming (shopping time, dishes, baking time), I finally decided on  caramelized banana pudding . And meringue making is merry. Flour is used in making the custard.  all purpose flour plays the corn starch  role of thickening the custard. I used  Parle G  instead of vanilla wafers.
