Sedona Spice

Over the weekend, as we drove in to Sedona, I saw the 3D emergence of Sedona from the I17 and was amazed that I hadnt seen it all the time sthat I have been there. A seesaw of cloudy and sunny day. I guessed that there is a rainbow in the offing. We did catch a rainbow at half the height of bell rock. We saw bands of trees in fall colours.
And lunch was at Tara Thai cuisine. In the parking lot were white booths selling art & crafts. There always seems to be a fair going on like that, only the location varies. Last time after hiking Mt Wilson, visit to the Chapel, and a sighting of Nicolas Cage's house with 4 garages, a visitor to the town was taken to the then running fair to picks trinkets for his wife. This time we found a man packing a wig with long hair. My friend asked him abou it only to find that it was horse's hair and not donated by a native person from her flwoing sheet of straight hair.
Once in the restaurant, we all ordered the soup instead of the salad. The menu was quite interesting, heavy and natural with the hand made paper on the cover. The pages inside were overwhelming with the varietes. The soup was refreshing with its warmth but the chicken had porous texture which didnt appeal to me. We had Pad Thai, Ginger Chicken, Panang and Fried Rice.
Ginger meat had stands of boiled ginger. No marrying the ginger with the meat. Pad Thai was undercooked. Panang and Fried rice were good but did not leave much impression

Streit's Potato Pancake Mix

In went some Indian spices - Cumin, Dhanajiru powder, pepper and salt. Had it with green mirchi chutney and dahi. Tasted like vada. Vegeterian Kishke  can be made with carrots and celery added to the potato pancake mix.

  Healthy protein cabbage After the onion gravy success, I was excited to find out who is next in the boxring. A cabbage. I have  afound a way to make my family love it - a lentil eg urad or moong (fried initially, adds crunch - learned from a friend's sister visiting then) in copious amounts and mandolin sliced cabbage I wanted to see if there was a different way to make it. I saw this split chickpea addition to it and wondered why I didnt think of it before. I know of a recipe with soaked split chickpea and onion curry (diced onions, but now I am thinking another recipe would be to give the special treatment to onions with a blend and then fried well - elevates any main ingredient even simple one like soaked split chickpea. oh no, now reimaging all the great food could have been if done well - thinking chole curry -- its like once you know a mistake and have tons and tons of papers, to go back and correct).
