Finding these in the fridge, with that chocolate frosting, I had to eat them. At first I thought, I will take just a bite of it, but then I wouldnt stop at short of finishing the frosting, That would be inconsiderate for the person who has to eat the rest of cupcake like a muffin. So I used "mini" as the ok to eat all of it. Another advantage of a mini cupcake is the frosting to cupcake ratio seems more than 1.

Banana pudding

I went over the roasted banana pudding recipe from yesterday and found it too consuming (shopping time, dishes, baking time), I finally decided on  caramelized banana pudding . And meringue making is merry. Flour is used in making the custard.  all purpose flour plays the corn starch  role of thickening the custard. I used  Parle G  instead of vanilla wafers.

Streit's Potato Pancake Mix

In went some Indian spices - Cumin, Dhanajiru powder, pepper and salt. Had it with green mirchi chutney and dahi. Tasted like vada. Vegeterian Kishke  can be made with carrots and celery added to the potato pancake mix.
