Coconut Cookies

Coconut cookies  from Complete childrens cookbook

Family and neighbours liked the crunch and the granola like texture. To get the burger patty like shape, I pressed the mixture into a cupcake liner in a muffin pan. I might have over melted the butter, but even the smaller drop cookies tasted and looked good like Hershey's kisses.
Since this does not use egg, I shared it with my
neighbour who doesnt eat egg. She said she'll share some makhaniya biscuits that go very well with tea.

Banana pudding

I went over the roasted banana pudding recipe from yesterday and found it too consuming (shopping time, dishes, baking time), I finally decided on  caramelized banana pudding . And meringue making is merry. Flour is used in making the custard.  all purpose flour plays the corn starch  role of thickening the custard. I used  Parle G  instead of vanilla wafers.

Streit's Potato Pancake Mix

In went some Indian spices - Cumin, Dhanajiru powder, pepper and salt. Had it with green mirchi chutney and dahi. Tasted like vada. Vegeterian Kishke  can be made with carrots and celery added to the potato pancake mix.
