The sliced Cucumber Conundrum
Folks at the Chew solved this sliced cucumber problem with Baby cucumber sandwiches, pat in place with creamcheese, top and bottom. Its a very refreshing sandwich.

Another of my concoction, a Sweetpotato Sandwich with Balsamic Mayo. Balsamic Mayo reminded me so much of chipotle Mayo that Food city used to carry. I stuffed a boiled half sweet potato. Makes for a filling sandwich.
