Coconut cake and curry

I had collected some very fancy recipes for a coconut lovers bday. But it fell on a festival and eggs are not allowed.
Vegan coconut cake is the way to go. I have never used vinegar in cakes before.
Yesterday, my husband bought green plantain. I have cooked it before but this was Dole's and felt it would ripen, given time. So I wasnt sure if it would be sweet and ruin the curry. But after reading that even banana peel can be used to make

I went ahead and made the curry, without even boiling like the oriignal green ones are supposed to be prepped.
From samosas, there was green chutney remaining. I had to use it.  Mint Chutney rice.

While there are books that are all about just one ingredient like Flavored oils and vinegars there are others that are about a gamut of things. It so happens that I am reading poems about horses and recognised Tasso's name beneath his poem translated. Second paragraph has life infused in it with equine motions. Another poem that I like in this collection is 'New Foal' by Ted Hughes.

Banana pudding

I went over the roasted banana pudding recipe from yesterday and found it too consuming (shopping time, dishes, baking time), I finally decided on  caramelized banana pudding . And meringue making is merry. Flour is used in making the custard.  all purpose flour plays the corn starch  role of thickening the custard. I used  Parle G  instead of vanilla wafers.
