Malai Kofta

I have to make kofta.
In a party the week before, I had amazing palak paneer. The recipe was from this same vegrecipesofindia site that I wanted to make Kofta from.
I was going to make paneer curry with onion and tomato paste but with tri color bell peppers in the fridge, I went ahead with Paneer Capsicum.
I had ground the cashews in the mortar. Once I thouhg tI was done, husband said it was taste less and late in the game, I realised I hadn't used the cashew powder. Adding it even in the last minute made it very rich and became the oomph factor of the dish.

Banana pudding

I went over the roasted banana pudding recipe from yesterday and found it too consuming (shopping time, dishes, baking time), I finally decided on  caramelized banana pudding . And meringue making is merry. Flour is used in making the custard.  all purpose flour plays the corn starch  role of thickening the custard. I used  Parle G  instead of vanilla wafers.

Cooking for engineers Tasso Ham . When I read that Tasso is also the name of an Italian poet, I wanted to point to his work too. I looked for it but found it in prehistoric language. It so happens that I am reading poems about horses and recognised Tasso's name beneath his poem translated. Second paragraph has life infused in it with equine motions. Another poem that I like in this collection is 'New Foal' by Ted Hughes.
