Zucchini Quiche

Potatoes the new quiche crust In my friend's words: Why I chose this recipe  I didnt have time for breakfast most days and wanted an egg based item I can quickly grab and go and heat at work and this fit the bill. These quiches are good even now in the fridge- 5 days later. I came across a post in thekitchn website for using shredded potatoes as quiche crust and was immediately drawn to it. The combo of the two recipes was perfect. I didnt skip any ingredients and used fresh shredded potatoes. Next time  maybe I will salt and drain the potatoes - maybe that will crisp them more.

Suddenly Grain Salad

In my excitement of the salad, I forgot to bring the water to boil before putting the perforated bag of the grains in the water. As a result, the grains were not well cooked. Nevertheless, the nuts and cranberries, the vinegar matched the nutty flavour of the grains.

At the mercy of pantry

I used up baking powder for Olive oil cake . That will make the lettering for Father's day. For the next batter, to submerge the letters in surprise, it now has to be a cake that does not require butter and baking powder, a Sponge Cake . Cake with biscotti lettters Pineapples in the pantry are the best air fresheners that can be.  With cut pineapple around, I was very tempted to make pineapple-upside-down cake. But no butter, no brown sugar so I just put pineapple quarters in the muffin pan, here come out these sweet, perfect surprises with the sponge cake batter.

Father's day cake

The  tie-dye number surprise cake was stirring in my head. So I made the not so red olive oil cake first in a loaf pan. How I hate loaf pans. Even after 40 min there was some wet batter here and there. While slicing the loaf I realised the work was already done with D and a , I just had to send some of them for a walk.  The q is the p coming back from a walk                        -  Ramon Gomez de la Serna                                                                     Sponge cake with olive oil cake biscotti . The original tie dye cake used pound cake. I wonder if my letters would have spared better in a loaf pan. It did make for an emphatic visual, which was what I was going for.                                 

Surprise Chicken Biryani

My husband made Chicken Biryani today and me guess the surprise, which I failed to. He followed Sanjay Thumma's recipe Why did he make it? His friend said its easy. Anything unexpected? While making, he wasnt sure, if the masala was enough. End result. The family liked it and saved some for neighbors too. What can go wrong with Biryani? The spice paste might be disproportionate to rice The rice could be soggy from disproportionate water Chicken might be undercooked (ah, the embarrassment when served to guests)  And none of that happened with biryani at hand. Perfect Triple Lemon Cupcakes

  My friend made these   Perfect Triple Lemon cupcakes I asked her why she chose this recipe coz she loves lemony flavors a lot, the blogger shared the same feelings and the triple in the title If anything turned out different than planned  Initial intent was to make a lemon cake but the pantry with its quantity of flour and butter and the hourglass had their say Why she skipped the lemon curd? Laziness and its something she makes quite often, what a good time to run out of just when you need it as show topper.

Cucumber Pickle

Today my husband made pickle with green cucmber. Just the same taste of mustard powder of the classic mango pickle. Dosa Avakaya Looking at this  Fried Cucumbers , an experiment is in order.

Coriander Mint Rajma

I had some leftover boiled rajma. I didnt want to make rajma like I always do, like everyone does in the tomato paste.  T. Susan Chang in  These 10 summer cookbooks talks about beans and The Better Bean Cookbook Even perfectly cooked beans can exhaust your appetite long before you get to the bottom of the bowl, for the blandness of a bean calls for aggressive seasoning to blast open its beige palette. Rajma tikki and rajma kadhi I boiled  potatoes and mashed it into Rajma for the tikki. In my perfect Rajma tikka world, coriander -mint chutney could not be missing, so I had that ready too with some yogurt blended in. Boiled rajma being in the fridge retained moisture in it in a coagulated form which was harder to read as watery, in went potato after potato to thicken the mixture. With average hopes, I set the patties in the pan, only to refuse to turn upside down, even with goading. thats when I got angry and mixed everything and the coriander-mint chutney and some peas.
